WHOLE PASTA WITH TOFU AND SOY PROTEIN SAUCE
500g whole pasta
200g GAIATRI fine soy protein
2 cans peeled tomatoes
½ smoked tofu
½ medium onion diced
50g butter
50 g grated parmesan cheese
1 coffee cup dry red wine
Nutmeg, salt and pepper to taste
Bunch of parsley minced
Cook pasta in salt water without
oil, according to manufacturer’s
directions. Place cooked pasta in oil basted serving dish and
set aside. Sautee diced onion, add tofu and previously hydrated
soy protein until flavor is absorbed. Stir in dry red wine
scraping bottom of pan to bring out the flavor until thickened.
Add grated parmesan, nutmeg and pepper. Before serving, mix
minced parsley with sauce and sprinkle over pasta.

VEGETABLE SALAD WITH GAIATRI SOY MAYONESE
1 carrot
2 potatoes
Green beans
2 apples
1 bunch parsley and green onions
GAIATRI soy paste any flavor
Salt, vinegar, mustard, flax seeds
Olive oil
Cut vegetables and apples into cubes. Cook vegetables separately
at appropriate cooking time for each; mince parsley and green
onions. Slowly thin soy paste with olive oil, add mustard
and vinegar, and salt to taste. Mix everything and sprinkle
salad with flax seeds.

SOY
MEAT LASAGNA
200g GAIATRI fine soy protein natural or dark
½ medium onion diced
1 bunch parsley and green onions
Tomato sauce
Olive oil or vegetable oil
1 lt whole milk
4 tablespoons wheat flour
1 tablespoon butter
300g mozzarella
100g grated parmesan cheese
100g champignon
1 bunch broccoli
2 packages pre- cooked lasagna
Nutmeg, salt and pepper to taste
Oregano and basil
In cooking pot, over medium heat, mix milk, flour, butter,
nutmeg and salt and stir continuously. When thickened to
white sauce texture, set aside. Heat olive oil and sautee
onion until golden brown. Stir in previously hydrated soy
protein, add tomato sauce to thicken. Add parsley and green
onions, salt and set aside.
In oven safe dish arrange layers starting with the white
sauce, then lasagna, soy meat, broccoli, champignon, mozzarella
ending with lasagna. Cover with white sauce and mozzarella,
sprinkle with parmesan, oregano and basil. Bake in pre-heated
oven until golden brown.

GAIATRI
SOY PROTEIN STROGNOFF
250g GAIATRI large dark soy protein
1 box ready to use tomato sauce
½ medium onion finely chopped.
1 bunch parsley and green onions
Creamed milk
Salt and pepper to taste
1 dessert spoon butter or margarine
2 tablespoons soy sauce
Hydrate soy protein for about
1 hour in cold water or ½ hour
in hot water.
Wash protein in running water squeezing water excess off
with hands. Sautee onion in butter until golden brown.
Add the soy sauce and the soy protein and let simmer for
about ½ hour
until reduced. Stir in creamed milk, let reduce and add
salt to taste. Add pepper, parsley and green onions when
almost done.
For a variation add diced mushrooms, burdock or GAIATRI large
natural soy protein. Serve with Cateto brown rice or GAIATRI
brown rice needle type.
Sprinkle with sea salt and enjoy.

CHRISTMAS
CAKE
350g flour
350g brown sugar
350g butter
350g each – black raisins, green raisins or plums
1 wine glass Port wine
1 tablespoon baking powder
1 tablespoon rose water
6 eggs
Beat egg whites until thick; add yolks, butter and sugar.
Beat well. Stir in flour, wine and rose water. Beat well. Mix
in fruit. Add baking powder and stir well.
Place batter in basted pan with removable bottom and bake in
pre-heated oven (about 180 degrees).

WHOLE
BREAD
4cups or 500g GAIATRI whole wheat flour
4 cups or 600g wheat flour
1 dessert spoon salt
½ cup or 100ml soy oil or any other preferred
3 cups or 600ml lukewarm water
40g fresh yeast
Mix yeast in lukewarm water and set aside. In large bowl
mix whole wheat flour, salt, oil and water with the yeast.
Slowly mix in wheat flour enough not to stick to hands. Knead
for about 10 minutes. Cover bowl with cloth and leave to
rest for 30 minutes. Make rolls and place in basted baking
sheets for another 30 minutes approximately. When the rolls
are doubled in size, bake in pre-heated oven for another
30 minutes. Baking time depends on oven temperature.
Note: this is the basic dough for whole bread; if you wish,
you may add any spices such as raisins, plums, apricots,
coconut, sesame seeds, flax seeds, oregano, basil, parsley
and green onions for a delicious variation.

APPLE PIE
4 apples
1 cup wheat flour or GAIATRI whole wheat flour)
1 cup GAIATRI fine oat flakes
1 cup brown sugar
1/3 butter cube
Peel apples, cut in cubes and place in a medium oven safe
dish. Mix flour, oats, brown sugar and butter cube. Cover apples
with this mixture and bake in medium heat for about 30 minutes.

BROWN RICE
1cup GAIATRI brown rice
3 cups water
Wash rice and place in thick cooking pan with water. Boil
in high heat, and then simmer to cook rice; if necessary,
add a little more water until cooked. If you wish, sprinkle
GAIATRI sea salt for a special taste and enjoy!

SOY PROTEIN
100g GAIATRI fine soy protein
1 bunch parsley and green onions
1 onion cut in cubes
3 tablespoons soy oil
1 tablespoon salt
1 tomato cut in cubes
Dash of curry
Dash of ground pepper – optional
Dash oregano
Soak soy
protein in hot water for ½ hour. Drain and
wash in running water squeezing excess water off. Set aside.
In cooking pot, sautee onions in oil, add soy protein and
the other spices, mix well and let cook for about 10 minutes.
