EGGPLANT LAZAGNA
INGREDIENTES:
1 kg peeled eggplant
200g GAIATRI fine soy protein natural or dark
1 medium onion in cubes
Olive oil
2 cans peeled tomatoes
300g grated mozzarella
100g grated parmesan cheese
Basil and oregano
Salt and pepper to taste
MODO DE PREPARO:
Boil peeled eggplant in salt water for approximately 5 minutes.
Set aside.
Sautee onion in olive oil until golden brown, add GAIATRI soy
protein previously hydrated and cook for a few minutes to absorb
flavor. Stir in the peeled tomatoes and cook until thickened.
Add basil and salt to taste. In an oven safe dish arrange the
layers starting with the sauce, then eggplant, mozzarella, sauce.
Top with grated parmesan cheese and oregano. Bake in pre-heated
oven until golden brown.
